丙烯酰胺是一種白色晶體化學(xué)物質(zhì)，是生產(chǎn)聚丙烯酰胺的原料。聚丙烯酰胺主要用于水的凈化處理、紙漿的加工及管道的內(nèi)涂層等。淀粉類食品在高溫（>120℃）烹調(diào)下容易產(chǎn)生丙烯酰胺。研究表明，人體可通過消化道、呼吸道、皮膚黏膜等多種途徑接觸丙烯酰胺，飲水是其中的一條重要接觸途徑。2002年4月瑞典國家食品管理局和斯德哥爾摩大學(xué)研究人員率先報道，在一些油炸和燒烤的淀粉類食品，如炸薯條、炸土豆片等中檢出丙烯酰胺，而且含量超過飲水中允許最大限量的500多倍。之后挪威、英國、瑞士和美國等國家也相繼報道了類似結(jié)果。
根據(jù)香港消費(fèi)者委員會的研究，含碳水化合物的食物在經(jīng)油炸之后，都會產(chǎn)生丙烯酰胺。研究已知丙烯酰胺可致癌。但世界衛(wèi)生組織表示，由于難以統(tǒng)計丙烯酰胺要到哪一個濃度才會致癌。 [1]
