琥珀酸二鈉：簡稱WSA，俗稱干貝素，是近年來調(diào)味品中廣泛應(yīng)用的鮮味劑。它較多存在于貝類、蝦、蟹等海產(chǎn)品中，對這類食品呈現(xiàn)的鮮美味道起到了很重要的作用。另外，琥珀酸二鈉在其他植物，如香菇中也有存在。我國食品添加劑衛(wèi)生標(biāo)準(zhǔn)規(guī)定其可應(yīng)用于調(diào)味品中。
琥珀酸二鈉分為結(jié)晶琥珀酸二鈉和無水琥珀酸二鈉。目前，食品工業(yè)中最常用的為晶體琥珀酸二鈉，通常含有6個結(jié)晶水。琥珀酸二鈉是白色結(jié)晶性顆?；蚪Y(jié)晶性粉末，無臭、無酸味，有特殊貝類滋味，味覺閾值0.03%，易溶于水（20℃ 35 g/100mL），不溶于乙醇。結(jié) 晶琥珀酸二鈉在120 ℃時完全失去結(jié)晶水，即為無水琥珀酸二鈉，無水琥珀酸二鈉鮮度約為結(jié)晶琥珀酸二鈉的1.5倍。
琥珀酸二鈉由琥珀酸與氫氧化鈉反應(yīng)制成，經(jīng)120℃熱風(fēng)干燥，粉碎得無水物。目前我國許可使用的有機(jī)酸類鮮味劑只有琥珀酸二鈉一種。
1．琥珀酸二鈉與谷氨酸鈉配合使用，一般使用量為谷氨酸鈉的10%左右。我國《食品添加劑使用衛(wèi)生標(biāo)準(zhǔn)》（GB2760-1996）規(guī)定，琥珀酸二鈉可用于調(diào)味料，最大用量為20 g/kg。
2．使用范圍及使用量
